8 oz Kamut Rotini or Bow Tie Pasta
1 Cup Cherry Tomatoes, diced
1 Scallion/Green Onion, thinly sliced
2 Tbsp Chopped Cilantro
1 Avacado, diced
1 Tsp Lime Juice
1 Ripe Avocado
1/2 Lime, juiced
1/4 Cup Cilantro, chopped
1/2 Cup Avocado Oil
1/2 Tsp Onion Powder
1/2 Tsp Sea Salt


Place ripe avocado, ½ lime, juiced, cilantro, onion powder, avocado oil and sea salt in a blender and process until smooth for dressing. Cook pasta according to package. Drain water and run under cold water. Toss 1 diced avocado with 1tsp lime juice. Combine remaining ingredients in a bowl and gently toss with dressing. Refrigerate for an hour before serving.
